Back of a napkin route planning:

I've heard advice that it'd be better to cycle in the more developed and less densely populated south, but a big part of why I'm doing this is to practice Hindi, which is very much a North India thing. Also, I'm keen to go to Punjab.

Approximate real route so far below, although OSM is sometimes inaccurate here and lacks new roads.
